Shamàn Pecorino wine – Abruzzo DOC – Rosarubra
Sensory notes
Colour: It’s appearance is focused on a brilliant straw yellow, with golden reflections that win you over at first glance and a consistency that is worthy of a wine of this alcohol content.
Nose: The bouquet is enchanting with intense aromas of ripe yellow fruit, apricot, peach, flowers, acacia, lime, wild flowers and interesting herbaceous nuances.
Taste: Intense freshness and delicate savouriness, perfectly balanced by a warmth, softness and roundness totally consistent with the late harvest of these grapes.
The taste is generous and long-lasting with perceptions consistent with the nose, an excellent drinkability despite the imposing structure, with a long and pleasant mineral finish.
History
In Pietranico, in the province of Pescara, in an uncontaminated oasis surrounded by the sea and the mountains of Abruzzo and by centuries-old trees, the doyen of the vines of Tenuta Rosarubra reigns supreme, the pecorino from which the white Shamàn is made.
This centuries-old vine comes from the Umbrian Apennines, where it lived at an altitude of 900 metres and, just as in the past, was “married”, i.e. clinging to supports, which in this case were mountain maples, to prevent the fruit from touching the ground.
The scions, which are the part of the plant with the vital buds, were healthy and perfectly preserved and were taken, transported to Abruzzo and grafted onto very old vines in the estate, which already recovered its splendid form the following year.
Harvest
At an altitude of almost four hundred metres and therefore with a magnificent temperature range, in a calcareous-clayey soil and with a Guyot training system, it enjoys a magnificent south/south-east exposure.
This is how this extraordinary wine is made, i.e. 100% pecorino grapes, by manually selecting the best grapes of the variety, harvested when slightly over-ripe from a certified biodynamic late-September farming method and therefore with true respect for the surrounding environment.
Vinification
Vinification is carried out in temperature-controlled steel vats and then matures in barriques for a period of no less than 12 months. The wine then continues its ageing in steel vats for a further 12 months, after which it is bottled, in the total absence of oxygen, and aged for at least another 10 months.

This is a long-life wine, a bottle of Shamàn white should never be missing in a cellar, because over the years its evolution could give very pleasant surprises.
But if you don’t want to wait that long, you should bring it to a temperature of 10-12 degrees and taste it with aperitifs, hors d’oeuvres, fish, vegetarian dishes, white meat, medium-aged or fresh cheeses.
Imagine a sauté of clams, baked sea bream, barley and courgettes, risotto with mushrooms or a turkey roll.
