Sensory notes
Color: a beautiful intense ruby red with slight purple reflections and a considerable consistency.
Nose: an intense and fine wine, with hints of plum jam, cherries, blueberries; ripe red berried fruits, a dried violet flowers.
Taste: dry, with remarkable warmth and a round and pleasant softness, well balanced with hardnesses that are manifested by a lively acidity and a gentile tannin of good temperament.
It has a very respectable structure, like a typical southern wine, and on the pallet it shows nice persistence, where the olfactory aromas are confirmed and a good sapidity in the finish is highlighted.
Harvest
It comes from an area particularly suited for winemaking, from ancient vines placed at an ideal altitude to ensure an excellent temperature range and which enjoy an ideal exposure to the sun.
The Primitivo is the result of a harvest done in two different moments: the first in August and the second in mid-September, strictly hand picked and farmed with a particular attention to the environment and its biodiversity.
Vinification
The vinification takes place in thermo-conditioned steel vats, at the end of which follows a malolactic fermentation and a subsequent maturation of at least 6 months in concrete tanks and then bottled in the total absence of oxygen.
How to combine our Primitivo wine
To be served at 14 ° -16 °, possibly with a nice large glass and always uncorking it a few minutes before serving, so as to allow it to “breath” well and express itself at its best.
Perfectly suited to well-structured and tasty dishes and fragrant cheeses, but also with aperitifs, appetizers, vegetarian dishes, grilled or backed meat and medium to aged cheeses.
Imagine it with pumpkin and sausage, Russian salad, maltagliati with beef tomatoes sauce, wild boar stew with mushrooms, minced meat pie or a tender Gregorian cheese from Scanno.
